And we’re back! J and I have been away for a week, exploring some beautiful beaches, bustling campsites, rolling surf and a very pretty wedding. We’ve been struck by some nasty mosquito bites, some fantastic adventures with friends, and some divine (camping style) meals.
We saw the New Year in with cocktails, headband games, and a very moist, freshly baked banana cake at midnight.
We enjoyed some Oat and Cinnamon Pancakes over the outdoor stove on a fresh summer morning next to our tent
We took part in a fantastically presented High Tea Party for a bride-to-be, put on by some incredibly clever and creative girls. (Well J didn’t. He went fishing.)
Then later, attended a very pretty and rather touching (albeit a tad windy) wedding by the sea, the wedding of an African girl and a Kiwi boy.

Cinnamon Oat Pancake Mix (for camping)
1 cups rolled oats
1 cup wholemeal flour
1/4 cup raisins
1/4 cup mixed fruit, chopped
1/2 cup powered milk
1/4 tsp. cinnamon
1/4 tsp. salt
Mix together ingredients, seal in ziplock bag and slip into camping bag. When camping, rouse yourself an hour before your friends wake, heat 1 1/2 cups of water over the stove and, when warm, mix with Pancake Mix. Take a long stroll along the white sand while the mix stands (about an hour). Return to husband cooking pancakes over the outdoor stove. Top with bananas, blueberries and maple syrup – if you happen to be camping in such luxury.
