A biscotto (singular term for biscotti) is always light and always crisp. It stores for weeks at a time and is perfect for when you need a crunch. They say we crave crunchy when we are bored.

Pretty sure I crave everything when I’m bored.

But biscotti definitely has a satisfying appeal (and the inexplicable ability to brighten up a boring afternoon) with the most crisp and audible bite (let’s just say I don’t recommend snacking on this at church. Or the library.). I must admit, I can’t enjoy one without a hot drink – the best way is dunked in a hot and creamy latte. (This is not for the floaty haters – I can guarantee you will get get crumbs in your coffee).

Perfectly seasonal with salty green pistachios, tangy red cranberries and golden flecks of lemon zest. Enjoy a biscotto on the summer deck with your iced tea (my dear family and friends in New Zealand) or brew up a strong espresso and watch the snow flakes accumulate on the windows (over here in northern Canada).

Cranberry & Pistachio Biscotti
Recipe from Little & Friday
Makes about 20 slices

2 cups flour
1 1/2 tsp baking powder
3/4 brown sugar
1 tsp vanilla extract
1 cup dried cranberries
1 cup pistachios, shelled
zest of lemon
2 eggs, lightly beaten

Preheat oven to 350˚F. Line a baking tray with baking paper.

Mix together all ingredients. With wet hands, shape dough into a log (about 20cm long) and place on prepared tray. Bake for 30 minutes.

Remove from oven and reduce temperature to 275˚F. With a sharp knife (a fine serration works well) slice log into 1 cm wide slices. Place slices on baking tray and return to oven for 15 minutes. Flip slices over and return to oven for a further 10 minutes, until they are dry and hard.

Store in an airtight container for up to 4 weeks.

  1. Uh yeah, I crave everything when I’m bored, especially if it has chocolate in it… ;) I always make biscotti at Christmas to give away as gifts, but I never think to make it just to have as a snack. I think that has to change…
